The modern history of the Scavino family starts with this vineyard, within the Fiasco cru. Here the Nebbiolo grapes were always the best: consequently in 1978 young Enrico convinced his father Paolo to vinify these grapes separately. In this way the first, and still most loved cru, was established. The austere and fascinating king of the Scavino home.
Soil type, exposure, altitude, planting year:
The soil in the region FIASCO (planting year 1938-1979-1984; exposure south-west; altitude 260 m a.s.l.), is geologically called Marna di San'Agata fossili that is locally known as töv (tufa). This soil is composed by gray silt-sand, marl, sometimes bluish, or whitish-gray on the surface. However, the
soil in this vineyard is various and in some parcels of it there are yellow-gray sandstone intercalated with clayey-sand in strata.
Vinification:
The grapes are harvested normally during the first decade of October. The maceration and the fermentation occur in steel rotary fermenters with temperature controlled. The malolactic fermentation occurs in oak barrels. Aging in French oak barriques for 12 months and further 12 months in French casks. After that, one more year of bottle aging before the commercialization.
