Farbe: deep ruby red
Bouquet: rich and complex, with aromas of black cherry fruit, spice, nutmeg and cocoa, as wel as floral notes, especially violets; closing once more on underbrush nuances, of blackberries and raspberries.
Palate: full, well-balanced, elegant, rich yet smooth tannins; complexity of aromas confirms the bouquet.
Tenuta di “San Castrese” (“San Castrese” Estate), Sessa Aurunca
Soil type: volcanic, rich in phosphorus , potassium, and microelements.
Year of vineyards' planting : various years since 1963 to 1992.
Vineyard altitude : 150 metres above sea-level. Harvest – time :“Aglianico”: from around October 20th to the end of October; “Piedirosso”: around October 10th – October 20th.
Destemmer-crushing, followed by the maceration of the dregs of pressed grapes at a temperature of 25 / 26C for about 20 / 25 days. During the fermentation, there frequent pumpoers and delestages.
After the alchoholic fermentation, there is the malolactic fermentation.
Maturation: 50 % in Allier oak barriques; 50 % in Slavonian oak for 10 / 12 months.
